Since 2017, Root has built a youth Culinary Training Program, Alumni Employment Program, Social Enterprise, and Community Catering Initiative to address food insecurity. Root helps young adults gain independence through food service training and employment. Recently, JPF supported Root’s fundraising event, where alumni and local restaurant Settler prepared and served a menu featuring seasonal ingredients.
Introduction
Despite the “no-wash” rumors out there, the first step in preparing mushrooms is to wash them, unless they are used in a raw preparation where it is best to thoroughly wipe them off with a paper towel.
Even before any rinsing, mushrooms have an incredibly high, water content. That release of water can be difficult to manage. Jacques explains that the “mushrooms sizzle at first then quiet down before they sizzle a second time because the moisture has evaporated” allowing them to brown.
Browning reactions are important for adding deep umami flavor to anything we cook, and that is especially true for mushrooms.
Through this course you will learn to use mushrooms as the primary ingredient in a variety of appetizers, sides, and main dishes.
