Chef Austin Johnson is the chef/owner of acclaimed One White Street, the progressive American restaurant in Tribeca which was recently named one of Bon Appetit‘s Best New Restaurants in America and awarded a Michelin star, among many other accolades.

Austin spent years working at some of the world’s best restaurants – at Eleven Madison Park for over four years and at Frenchie in Paris as Executive Chef, running their three restaurants. In summer of 2021, Austin opened One White Street (with Master Sommelier Dustin Wilson) in a historic 19th century townhouse in Tribeca that was once a hangout for John Lennon and Yoko Ono. At One White Street, Austin serves modern American food with global influence, an emphasis on seasonal ingredients using produce grown at their Hudson Valley farm, Rigor Hill. Downstairs is a more casual a la carte menu, where the upper two floors of the townhouse are for his tasting menu.

Broccoli Salad with Aged Cheddar

While cooking in Paris, I discovered amazing produce in markets everywhere. On returning to New York, I committed to searching out exceptional, organically grown ingredients and making vegetables the center of the plate. This recipe shaves broccoli for textural contrast, tossing it with cheddar, three ways – cubed for intense creaminess, baked until crispy and finely grated to shower over the top. Seek out the best cheddar you can find, which for me is local, raw-milk, clothbound, aged cheddar.
